This is the start of Memorial Day Weekend and the Official launch of the summer grilling season. Yes, I know, we Southern Californians grill all year long but sometimes, we have to give a nod to how the rest of the country lives!
So, for the inevitable BBQ of burgers, hot dogs, ribs, steaks and chicken, come the sides that we all know and love. Baked beans or BBQ beans coleslaw, fresh corn (on the grill!), chips and dips … and something cool to wash it all down! Sounds good to me!
How about a different ‘coleslaw’? Let’s try a broccoli slaw, for color, more crispiness, and a chipotle dressing to kick it up a notch and enhance whatever is on the grill! It’s simple, and you can kick it up higher by adding more chipotle seasoning if you like.
Enjoy the holiday from all of us at Cooking With Char!
Smokin’ Chipotle Broccoli Slaw
- 1 bag broccoli slaw
- 3 red radishes, halved and thinly sliced
- 1/2 c jicama, julienned, optional
- 1 pkg. chipotle seasoning mix
- 1 cup mayonnaise
- 1/2 cup salsa, homemade or your favorite from the store
- Salt, to taste
Toss broccoli slaw, radishes and jicama (if using) lightly to blend in a medium sized bowl. Set aside. In a small bowl, combine seasoning mix, mayo, and salsa and mix well. Let sit about 15 minutes for flavors to blend.
Stir dressing into broccoli slaw mixture, season with salt if needed, and chill before serving.
