This is a different take on the traditional “Green Beans Almondine”. I’m using a brand new product I found at the Savory Spice Shop in Palm Desert. It’s called Vanilla Paste and while it is not a paste in the usual sense, it is thicker than the usual vanilla extract and has tiny bits of vanilla bean to give it added flavor. I find I don’t need as much of the Paste as I use of the extract and get a more complex flavor!
Adding a touch of vanilla to the green beans gives them an enchanting flavor that even the French would appreciate on their beloved haricots verts!
Almond Vanilla Green Beans
- 8 oz fresh green beans
- 1/3 oz. slivered or sliced almonds
- 1-1/2 tsp. butter
- 2 tsp. vanilla OR
- 1-1/2 tsp. Vanilla Paste (from Savory Spice Shop)
- salt & pepper to taste
Cook green beans until crisp tender and still bright green. Drain well and keep warm. (They can be blanched in boiling water or lightly steamed on top of the stove or in the microwave – whatever is easiest for you.)
Meanwhile, in small skillet, melt the butter and sauté the almonds until they are just turning light, golden .brown, stirring occasionally. This will happen quickly so watch them carefully so that they don’t burn! Remove from heat and add vanilla (or vanilla paste), salt and pepper. Pour over beans and toss lightly.
