Frog Pie = Avocado Lime Pie

Frog Pie aka Avocado Lime pie No, it doesn’t contain frogs – but it is green! And it is sweet! And it is summery! And you don’t have to bake it if you don’t want to (you can make a graham cracker crust or even buy one)!

The origin of this recipe is the Glendale Adventist Hospital, believe it or not, but I have found similar recipes in other cookbooks so apparently it is a favorite in many places.

It is full of really good things, so try it! It may turn out to be your very most favorite frog!

Frog Pie aka Avocado-Lime pie

  • 1 medium to large Hass ripe avocado
  • 1 14 oz. can sweetened condensed milk
  • 1 tsp grated lime zest
  • 1/2 c lime juice
  • 2 egg yolks, lightly beaten
  • dash salt
  • 1 9″ pie shell baked or 9″ graham cracker shell
  • Mint leaves or whipped cream, optional

Peal avocado and discard pit. Either force avocado through a fine sieve or put in food processor and process until a smooth puree with no lumps is formed.. You should have at least 1 cup of puree.

Combine sweetened condensed milk, lime zest, lime juice, egg yolk and salt; stir until slightly thickened, then fold avocado puree into milk mixture. Turn into pie shell. Chill several hours.

Garnish with mint leaves and dollops of whipped cream (plain, unsweetened whipped cream will help lessen the pie’s sweetness).

Serves 6 – 8
