Bacon Crisps - cheese filled wrapped crackers

Earlier blogs have talked about how popular bacon is outside the usual breakfast menu. Here is an easy way to make a tasty appetizer that will be great anytime – but will be good if you are having a 4th of July party on Thursday. I know it’s hot and the thought of lighting the oven isn’t making you do jumping jacks….but you can do these early in the morning before the temperature rises.

The wonderful smell of bacon cooking just might get everyone up and started without you having to drag them out of bed!

Bacon-Wrapped Crackers

  • 1/2 cup freshly grated Parmesan or sharp cheddar cheese
  • 1 sleeve buttery rectangular crackers (you may need more)
  • 1 pound sliced bacon cutting each slice in 1/2 (approx 30 – 32 pieces)

Preheat the oven to 250 degrees F.

Place 1 teaspoon of the cheese on each cracker and wrap tightly with a  half strip of bacon. Place the wrapped crackers on a broiler rack on a baking sheet and put the baking sheets on the oven rack. Bake for 2 hours or until the bacon is done. Do not turn. Drain on paper towels. Serve hot or at room temperature.


A Tip from the Toque: You can also bake at 350 degrees F for 40 minutes if you’re in a hurry!
