Starbucks™ Banana Walnut Bread

One of the best pastries I’ve ever eaten at Starbucks™ was their Banana Walnut bread. If you’ve had it, you will probably agree it is really good….so good you would love to make it at home. Now you can!

This is so easy… no mixer; just 2 bowls, a whisk, a spoon and a rubber spatula (and you can do it all with the spoon if you want to). This is one your tweens will be able to do and brag about! Serve it warm, toasted or at room temp. I love it toasted with a little cream cheese…..ahhhhhhh, and a cup of hot tea!

Starbucks™ Banana Walnut Bread

  • 2 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1 c plus 2 Tbsp. sugar
  • 1/2 c vegetable oil
  • 2 Tbsp. buttermilk or plain yogurt
  • 1/2 tsp. pure vanilla extract
  • 3 ripe medium to large sized bananas, mashed
  • 1/2 c chopped walnuts
  • 1/3 c (additional) coarsely chopped walnuts

Preheat oven to 325. Butter and flour a 9″x5″x3″ loaf pan.

Whisk together flour, baking soda and salt in a bowl. Set aside.

In a large bowl, mix the egg, sugar and vegetable oil until combined. Add the flour mixture to the egg mixture a cup at a time and whisk together until all the flour mix has been added and mixed in. Add the buttermilk (or yogurt), vanilla and mashed bananas. Mix well. Fold in the 1/2 cup chopped walnuts and pour batter into prepared loaf pan.

Top the batter with the 1/3 cup coarsely chopped walnuts. Bake for 45-60 minutes until a toothpick put into the center of the crack comes out clean.
