Yes, you’re about to GAIN an hour of sleep tonight when the time changes, and I’ve solved tomorrow’s breakfast problem! Prepare this and refrigerate it today … then when you amble into the kitchen in the morning, pop it into the oven while you make coffee, set out the juice and get the gang up for whatever Sunday activities you have planned. You’ve been wishing for a 25 hour day for everything you could do with the extra time. Here’s your chance!
Stuffed French Toast with Raisins
- 8 slices Cinnamon Raisin bread
- 2 8 oz. pkgs. cream cheese, cut into 1″ cubes
- 8 oz. ham steak, cubed or cooked breakfast sausage, in 1″ slices
- 1 oz raisins or dried cranberries or dried blueberries
- 12 eggs
- 1 c milk
- 1/3 c real maple syrup (not pancake syrup)
Butter or spray a 9″ x 13″ casserole.
Cut crusts from bread (save to make breadcrumbs) and cut into 1″ cubes. Spread 1/2 of the bread cubes over the bottom of the casserole. Cover with cream cheese cubes, then cover with ham or sausage. Cover with remaining bread cubes and sprinkle with raisins.
Whisk together eggs, milk and maple syrup. Pour over bread mixture, cover and refrigerate overnight.
In the morning, preheat oven to 375 uncover and bake for 45 minutes.
Serves 6 (Leftovers can be reheated with a few drops of water in the microwave for about 15-30 seconds, depending on your unit’s wattage.)
