Don’t Tell Them and They’ll Eat It!

Eggplant & Tomato Casserole

Funny how people will eat something – love it – UNTIL they find out what’s in it and then they don’t like it any more!  That was me – back in pre-historic days – when I was sure I didn’t like eggplant! But someone served an appetizer that was mainly eggplant and I loved it and was shocked and had to admit that I loved it EVEN THO it was eggplant.

Same thing here! Just don’t tell anyone who says they don’t like eggplant that it’s eggplant. Say it’s Aubergine & Tomato! Maybe they won’t notice and realize how delish this is! It worked on my father….He didn’t like eggplant but used to ask my mother to make that “casserole with the rows of tomatoes on top”!

Eggplant & Tomato Casserole

  •  2 c water
  • 2 tsp. salt, divided
  • 2 lbs. eggplant, pared and cut into strips (about 8 cups)
  • 2 eggs, beaten
  • 1/2 c dry bread crumbs
  • 2 tbsp. chopped onion
  • 1/2 tsp. dried basil, crumbled
  • 1/4 tsp. pepper
  • 2 Tbsp. butter
  • 3 medium Roma tomatoes, sliced
  • 4 – 5 cherry or tomatoes, halved widthwise
  • 1/4 c plus 2 Tbsp. grated Parmesan cheese
  • salt & pepper to taste

Preheat oven to 375. Spray or butter a round 2 qt. casserole or 11″x 7″. Dot with 1 Tbsp. butter.

Heat water and 1 tsp. salt in Dutch oven to boiling; add eggplant. Return to boil and cover. Cook until tender, about 5 minutes. Drain and smash eggplant with the back of a large spoon.

Mix eggs, bread crumbs onion, 1 tsp. salt,  basil and pepper in large bowl, add smashed eggplant. Spread mixture into prepared baking dish. Arrange tomato slices in circular rows over eggplant; fill holes with halved cherry tomatoes; salt and pepper to taste. ##  Bake at 375 about 20 minutes until brown and tomatoes are barely tender.

##  NOTE: Casserole can be prepared to this point up to 24 hours in advance. Store covered in refrigerator. Uncover and bake at 375 increasing baking time to 25 – 30 minutes.
