Pizza? for dessert? Sure, why not? You can make a Dessert Pizza in as many ways – if not more – than you can a meal or snack pizza. Let your imagination be your guide here.
Start with a cookie crust for those ‘thin crust’ lovers, or maybe a brownie bottom for you “deep dish” fans. How about a sweetened cream cheese frosting on which to put …. candy of the season….fruit….cookies….a little of all of the above? Why not? Make a face on your pizza! Make it look like one from your local take-out or delivery place using fruit rolls, licorice vines, marshmallows…coconut! Have fun with it! Invite your friends over for a “Pizza Party” and let them all design their own!
To get you started, here’s one that will remind you of a famous candy bar….
Chocolate Macaroon Pizza
Makes 1 15″ or 2 8″ pizzas. Using either a 15″ pizza pan or 2 8″ pizza pans or tart pans with removable bottoms, line with parchment paper. (If you have a large, round pizza stone, this will be better but be SURE to line it with parchment or the batter will roll off!)
- 1 pkg. your favorite fudge brownie mix PLUS the ingredients to make the brownies
- 2 egg whites
- 1 14-oz pkg. sweetened, flaked coconut
- 1 14-oz can sweetened condensed milk (NOT evaporated milk)
- 1 pkg. (approx. 2-1/4 oz.) sliced almonds
- 2 Tbsp. semi-sweet chocolate, chopped
- 1 tsp. vegetable oil
Make brownies per package instructions. Pour batter onto parchment paper-lined large pizza pan or pizza stone or bottom of tart pans. Smooth tops leaving a 1″ border of parchment for brownie to expand. Bake 15-18 minutes or until brownie is set. Do not overbake. Remove from oven and set on cooling rack.
Combine egg whites, coconut and sweetened condensed milk; mix well. Spread coconut mixture over top of brownie to within 1/4″ of edge. Sprinkle with almonds. Return to oven and bake 20-25 minutes or until edges of coconut are deep golden brown. Remove from oven to cooling rack.
Place chopped chocolate and oil in small, microwave-safe container and microwave, uncovered, on HIGH for about 35 – 40 seconds or until chocolate is melted and smooth, stirring at 10 second intervals. Do not overheat. Drizzle chocolate over pizza.
Cut into wedges and serve warm or at room temperature. Makes 16 slices.
