Coffee? Tea? Maybe something a bit stronger? Well, what’s in MY mug is a chocolate cake! Yup, and I’m about to add some coffee ice cream and INDULGE myself! How, you ask? Easy! Just follow the recipe below and enjoy it before you know it!
Chocolate Cake in a Mug
- 1 Large Coffee Mug
- 4 Tbsp. sugar
- 2 Tbsp. unsweetened cocoa
- 1 egg
- 3 Tbsp. milk
- 3 Tbsp. oil
- 1/2 tsp. vanilla
- 3 Tbsp. chocolate chips
- 1-1 1/2 tsp. chopped walnuts (optional)
Add sugar and cocoa to mug and whisk to blend. Add egg and mix thoroughly. Pour in the milk, oil and vanilla and whisk until smooth. Stir in chocolate chips and nuts if using.
Place on a microwave-safe plate in your microwave and cook for 3 minutes at 1000 watts (a bit longer at 750 watts; a bit less at 1200 watts). The cake will RISE up over the top of the mug but DON’T PANIC! It may even pop out!
Allow to cool a little and tip out onto a plate (if it hasn’t already) , if desired and be decadent….add some ice cream!
