Score a TD with these delish Spinach Balls – especially if you shape them into little footballs! A great way to get the gang to eat their spinach. You might need to make more at half-time!
- 2 pkgs. frozen chopped spinach (10 oz. each) drained well
- 2 cups herb-seasoned stuffing mix
- 1 cup parmesan cheese
- 4 eggs, slightly beaten
- 3/4 cup butter, softened
- 1/2 tsp. pepper
- 1/4 tsp. freshly grated nutmeg, or to taste
- 1/4 cup finely minced onion
Place parchment paper on baking sheet. Preheat oven to 350.
In large bowl, combine all ingredients; mix well. Shape by rounded teaspoons into small balls (You can roll them a little and pinch ends slightly to resemble little footballs). Bake for about 15-20 minutes until firm.
