Is there ANYONE who doesn’t like Chocolate Mousse! Maybe a few but….for those who want one that is quick, easy and delicious, this is IT!
Everything goes in the blender, you let it whirl, and pour it into serving dishes and it’s done. You can top it with anything you want…I usually leave it plain because I’m just to anxious to eat it!
If you want to fancy-it-up a bit, try the Healthy Top from Mimic Cream. It’s made from cashews and almonds and is FREE (dairy-free, soy-free, lactose-free, gluten-free and cholesterol-free!). Shelf stable until opened, it will last 14 days in the ‘fridge after opening. It whips beautifully which is why you can use it to top the Mousse! Click the image below to learn more….
- 1/2 cup boiling water
- 1-1/2 tsp. instant coffee (regular or decaf)
- 12 oz. semi-sweet chocolate chips
- 1/2 tsp. pure vanilla
- 4 whole eggs *
- 1/4 cup Galliano
Dissolve instant coffee in boiling water. Put all ingredients into blender and blend at high speed until completely smooth. You may want to scrape down the sides to be sure everything is combined.
You can top with Galliano-flavored whipped cream, whipped Healthy Top, or chocolate shavings, or just plain.
*Don’t be concerned about the eggs being raw. The boiling water, vanilla and Galliano will contribute enough to ensure that this is safe to eat. (I’ve been making it for over 25 years with never a problem.)
