‘Oranga’ Tired of Chicken?

Don’t you get tired of eating chicken? I know I do, so this time, how about Cornish Hens? They are small and cute, stuffed or not,  and are done in just over an hour! Add our make-ahead Cheesy Cauliflower Casserole, steam some asparagus and you have a fabulous dinner for family or friends. I’ll bet even  the kids will like the idea of having half of a little one of their own!

Orange Honey Glazed Cornish Hens

  • 2 Cornish Hens (or your favorite chicken parts – about 3 lbs.)
  • 1/2 orange
  • 2 tsp ground ginger, divided
  • pinch salt
  • 1/3 cup peanut oil (or light flavored salad oil)
  • 1/4 cup honey
  • Orange slices

You can prepare the Cornish Hens whole and stuffed, or cut them down the middle so they lie flat giving you 4 pieces. If you choose to stuff them, a Wild and Brown Rice (the regular Uncle Ben’s works really well with them) is perfect.

Rub the hens with the half orange. Sprinkle with 1 tsp. ground ginger. Combine oil, honey and remaining 1 tsp ground ginger. Arrange hen (or pieces) in baking dish and brush with honey mixture.

Roast at 350 for 1-1/4 to 1-1/2 hours, basting occasionally with honey mixture. The stuffed hens will take a little longer as will larger chicken parts. Test to be sure they are cooked all the way through.  Garnish with orange slices before serving. Serves 4.
