Strawberry Waffles

Strawberry Waffles

  • 3 cups whole wheat flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 2 Tbsp sugar
  • 4 eggs, separated
  • 2 cups milk (whole or 2% is best)
  • 4 Tbsp salad oil
  • 1 cup crushed strawberries

Preheat waffle iron per manufacturer’s recommendations. In a large mixing bowl, combine flour, baking powder, salt and sugar and whisk together until blended. Add milk, egg yolks and oil, stirring until batter is lumpy. Blend in crushed strawberries. Beat egg whites until soft peaks form; then fold into batter until no streaks remain.

Bake on hot waffle iron until golden brown. Serve with melted butter, strawberry or maple syrup. Will make about 8 regular waffles or 5-6 Belgian waffles.
