Breakfast for Dinner

For dinner, try breakfast! One of my favorite tricks is to drop some pre-made waffles or pancakes into the toaster or toaster oven, fry or poach some eggs to put on top, drizzle with syrup and maybe sprinkle with some favorite nuts. My very most favorite is to top a full sized waffle with a scoop of ice cream, some maple syrup or fruit, and enjoy a cool and refreshing dinner. (And if the waffle is multi-grain, you get some extra fiber, too!)
