Orange Glazed Chicken
- 1 6 ounce container frozen orange juice, defrosted
- 1 heaping Tbsp Dijon style mustard
- 1 tsp dried tarragon (or 1 Tbsp fresh)
- 4-6 skinless, boneless chicken breasts or thighs (or combination)
- Paprika, optional
Combine defrosted orange juice, mustard and tarragon in a bowl and whisk until you cannot see any chunks of mustard. Place chicken and marinade in sealable plastic bag and close tightly. Be sure chicken is coated on all side with marinade. Let marinate for about 30 minutes to an hour (preferably in the refrigerator).
When ready to cook, drain chicken well. BBQ or broil basting with marinade for the last 5 minutes. Or, you can bake at 375F with the marinade. If you are going to bake it, sprinkle the top with some paprika and bake, uncovered, for about 35-40 minutes. Be sure the chicken is cooked through and no ‘pink’ shows when you cut into it.
