It’s the “dawg days” of summer – the time when the ancient Romans saw a star we now call Sirius, the Dog Star, rise next to the sun in the constellation Canis Major. They thought it was the conjunction of Sirius and the sun that created this weather.
Who cares what causes this heat and humidity? What I want is something COOL! A bowl of cold, vegetable soup makes for a nice light lunch or dinner. Gazpacho is one of my favorites…it’s easy to make, is chock full of fresh vegetables and healthy juices and is full of vitamins and fiber. Add a touch of sour cream, guacamole, or a few slices of avocado or a few croutons and you have a great lunch with a sandwich or by itself. It’s also a good dinner starter in place of a salad – since it’s a liquid salad!
